Pita bread is one of our go-to options for quick and easy pizza bases. It’s practical, budget-friendly, and turns pizza night into a simple yet delicious affair. This particular pizza comes together perfectly because we sauté the bell peppers and onions before adding them as toppings—meaning the only thing you’ll need to worry about in the oven is getting that perfect crispy base.
Ingredients:
-
2 small pita breads
-
4 tablespoons pizza sauce
-
1 red bell pepper, sliced
-
½ onion, sliced
-
8 olives, sliced
-
Dried oregano, to taste
-
Olive oil (for sautéing and drizzling)
Instructions:
-
Sauté the veggies: Heat 1 tablespoon of olive oil in a skillet over medium heat. Add the sliced red bell pepper and sauté until the peppers start to soften and develop some color.
-
Add the sliced onion to the skillet and stir to combine with the peppers. Continue cooking until the onions are soft and translucent. Season with a pinch of salt.
-
Assemble the pizzas: Line a baking tray with parchment paper and place the pita breads on top. Spread 2 tablespoons of pizza sauce on each pita. Evenly distribute the sautéed peppers, onions, and sliced olives between the two pita breads.
-
Drizzle with a bit of olive oil and sprinkle with dried oregano. For an extra kick, add some red pepper flakes if you like it spicy.
-
Bake: Preheat your oven to 400°F (200°C). Bake the pita pizzas for 8-10 minutes, or until the pita is crispy and golden.
