Ingredients:

2 large ripe bananas

2 small sweet potatoes (about ⅔ cup), boiled until tender

¼ cup olive oil

1 tsp vanilla extract

⅓ cup brown sugar

½ tsp cinnamon

½ tsp nutmeg

½ tsp salt

½ tsp baking powder

½ cup chopped nuts (walnuts or pecans)

1 ½ cup all-purpose flour

1 tbsp apple cider vinegar

1 tsp baking soda

Preparation:

  1. Preheat the oven to 350 F.
  2. In a large mixing bowl, mash the bananas and sweet potatoes with a fork until smooth.
  3. Incorporate the following to the bowl (in the amounts specified above): olive oil, vanilla, sugar, cinnamon, nutmeg, salt, baking powder and chopped nuts. Mix well.
  4. Fold in the flour and thoroughly combine it until you get a smooth and sticky batter.
  5. Pour in the vinegar, and then the baking soda, mixing these quickly into the batter.*
  6. Pour the batter in a greased or lined baking pan, and bake for about 45-50 minutes or until a knife in the center comes out clean.
  7. Allow it to cool before serving.

* When vinegar and baking soda are mixed, they produce a chemical reaction that can act as a leavening agent, but this reaction does not last forever, so once these are incorporated into the batter, the mix should go in the oven as soon as possible.
