For this recipe, we use the humble black bean, which we love for its creamy and distinctive flavor. This is a perfect recipe for a quick dinner or weekend brunch, as it should take no longer than 45 minutes to be ready to serve.
Ingredients:
For the patties:

1 can black beans, drained

1/2 a medium onion

1/4 cup sunflower seeds

A few stalks of fresh cilantro

2-3 chunks of bread

1 tbsp sun-dried tomatoes
-
2 garlic cloves, minced or mashed
-
1 tsp ground coriander
-
1/2 tsp ground cumin
-
1 tsp salt
-
1 tsp sugar
-
1 tbsp ground flax seeds
-
1/2 cup panko breadcrumbs or as needed

Black pepper, to taste
For the salsa (version 1):
-
4-5 grape or cherry tomatoes
-
1/2 cup diced onions
-
1 hass avocado, cubed
-
2 tbsp lime juice
-
¼ cup fresh chopped cilantro, parsley, or basil

1 tsp salt
Additional ingredients:

6 burger buns
-
Mustard, lettuce, onion, and tomato slices (for version 2)
Preparation:

In a food processor, combine all the patty ingredients except the black beans, panko, and spices, and quickly blitz until combined but still chunky.

Add the black beans and the rest of the patty ingredients, then pulse a few times to combine. Ensure there are still whole beans left in the mix, as fully pureed beans can make the patties too soft.

Add more breadcrumbs if needed to firm up the mixture, but mix them in with a spoon. You should be able to shape the patties easily without making a mess or getting sticky hands.

Line a baking tray with parchment paper and spread oil on the surface.

Divide the mix into 6 equal parts and shape each patty with your hands, forming a ball first and then pressing it down to make a flat circle.

Place each patty on the greased tray and drizzle oil on the top.

Bake at 400°F for about 25 minutes, flipping each patty halfway through the baking time so that both sides get crispy.
To Assemble:
Version 1:

Spread mayo on the bun base, add a spoonful of salsa (made from the salsa ingredients listed above), top with the patty, and then add another spoonful of salsa on top.

Close with the top bun.
Version 2:

Cut a few slices of beefsteak tomato and onion.

Spread mayo on the bun base, add the patty, and top with the onion and tomato slices, and a bit of lettuce.

Spread mustard on the top bun and enjoy.
